Making Gluten Free Muffins – If You Give A Moose a Muffin

We are doing something totally different for this months Virtual Book Club! We did some cooking. My oldest has celiac so about 99% of what we cook is gluten free. I thought I would share our fun gluten free muffins that we make from scratch! This is a great and easy cooking project with kids!

This cooking project goes great with the book If You Give a Moose a Muffin. We love this book and read it often.

When the girls are cooking I try and have them do as much of the cooking as is possible.

My younger two were in charge of all the dry ingredients. They got to measure and mix them together.

My oldest did all the wet ingredients. She got to measure and mix them.

Then we combined them and everyone got a turn at mixing it.

After everything was mixed together we scooped out the muffins into the mini muffin pan.

We cooked the muffins and had fun eating all of them!

How to Make the Muffins

Ingredients:
3 cups Bob’s Red Mill Almond Meal/Flour, 16-oz. Packages (Count of 4)
3 cups Bob’s Red Mill Gluten Free Whole Grain Rolled Oats, 32 Oz
1 cup King Arthur Gluten Free All-Purpose Baking Mix, 24 Ounce
1/4 tsp Bob’s Red Mill Gum Xanthan
1/2 cup sugar
4 tsp. Baking Powder
4 Tbsp olive oil
3 Eggs
2 Cups So Delicious Almond Milk

Instructions:
1. Preheat over to 425 Degrees.
2. Mix the all the dry ingredients together in a large mixing bowl. I use a spatula to mix the ingredients.
3. Mix all the wet ingredients together in a bowl separate from the dry. Make sure they are all mixed together good.
4. Slowly mix all the wet ingredient into the dry. Use a spatula to mix the wet and dry together.
5. Spray the 24 Cup Mini Muffin Pan. (double check that the spray you use is gluten free. Not all of them are.)
6. Scoop small spoonfuls of muffin mix into the 24 Cup Mini Muffin Pan. It should be just about even with the top of the tin.
7. Put in oven and bake for 11 to 12 minutes or until slightly brown on the bottom.
8. Gentle remove the muffin with a fork from the pan.

This makes around 48 mini muffins depending on how much is put into each muffin.

    1. They love making muffins. we make them at least 3 or 4 times a week. The mini size makes great snacks for the girls as well. They love it when it is their turn to be mommy’s helper in the kitchen.
